Seattle-based Copperworks Distilling has released a limited-edition single cask whiskey that showcases the distinctive terroir of Washington State through locally sourced ingredients and traditional production methods.

Single Cask No. 497 is a rare offering from the brand’s Washington Peated American Single Malt Whiskey collection. The limited release of just 200 bottles represents a significant milestone for the craft distiller as it continues to establish Washington’s credentials in the expanding American single malt category.

Copperworks Distilling Washington Peated American Single Malt Whiskey – Single Cask No. 497 

The whiskey is crafted exclusively from Fritz variety barley grown in Washington’s Skagit Valley. What makes this release particularly distinctive is the use of locally sourced peat during the malting process, imparting a regional character that differs from traditionally peated Scotch whiskies.

After distillation, the spirit was matured for 4 years and 3 months in new American oak casks before being bottled at its natural cask strength of 59.7% ABV (119.4 proof).

Jason Parker, Copperworks President and Co-Founder, explained the special maturation process behind this release: “When we bottled our first batch of Peatsmith American Single Malt Whiskey, we set aside Single Cask No. 497 to continue maturing. After nearly a year of maturation, this rare release brings together the smoky, earthy peat and rich, smooth malt profile. It’s bold, complex, and truly one of a kind.”

Tasting Notes

According to the distillery’s detailed tasting notes, the whiskey offers an aromatic profile featuring caramelized sugar, honey, and cake batter, complemented by regional wood notes of red cedar and sunbaked driftwood. The palate reportedly delivers salted caramel and cinnamon-sugar graham cracker flavors alongside beach bonfire smoke and mesquite-smoked meats.

The release represents a growing trend among American craft distillers who are moving beyond traditional bourbon and rye to explore single malt expressions with regional character. By using locally grown barley varieties and Washington-sourced peat, Copperworks is contributing to an emerging Pacific Northwest whiskey style that reflects the region’s agricultural bounty and distinctive terroir.
