Cathead Distillery marks a milestone this month with the release of its Estate Collection Straight Wheat Whiskey, the first 100% wheat whiskey produced entirely in Mississippi to reach markets beyond state lines. The Jackson-based operation, which holds the distinction as Mississippi’s oldest legal distillery, cultivated, distilled, aged, and bottled this premium spirit using wheat grown exclusively on Mississippi soil.

A Whiskey Made Entirely in Mississippi

The small-batch release features a unique 100% wheat mash bill, pot-distilled and patiently aged for seven years in new charred oak barrels. Cathead’s master distillers carefully selected the finest barrels from a fourteen-barrel lot to create this 100-proof expression.

This latest offering builds on Cathead’s reputation for quality spirits and community involvement. The James Beard-nominated distillery, founded in 2010 by friends Austin Evans and Richard Patrick, continues its tradition of paying homage to Mississippi’s rich blues heritage. The company name itself derives from a term Mississippi blues musicians used to honor respected artists, and Cathead maintains its commitment to supporting regional arts and culture through charitable donations.

The official tasting notes suggest that whiskey enthusiasts can expect an aromatic experience featuring rich vanilla and baking spices, complemented by notes of toasted marshmallow, cherry, and bubblegum. The spirit delivers a buttery mouthfeel with sweet, nutty flavors of almond and hazelnut wrapped in abundant vanilla, finishing with hints of grain and citrus that linger with a dreamsicle-like vanilla character.

The Estate Collection Straight Wheat Whiskey retails for $75 and will reach shelves across seven southern states: Alabama, Florida, Georgia, Louisiana, Mississippi, South Carolina, and Tennessee.
